  • 2 tbsp olive oil
  • 1 medium onion diced
  • 2 medium carrots sliced
  • 2 medium potatoes diced
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup cooked chicken shredded (optional)
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley

Method
 

  1. Step 1: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until it becomes translucent, about 3-4 minutes.
  2. Step 2: Add the sliced carrots and diced potatoes to the pot. Cook for about 5 minutes, stirring occasionally, until they start to soften.
  3. Step 3: Pour in the chicken or vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to a simmer and let it cook until the vegetables are tender, approximately 15-20 minutes.
  4. Step 4: Stir in the heavy cream and the cooked chicken, if you're using it. Season with salt and pepper to taste, adjusting as needed.
  5. Step 5: Allow the stew to simmer for an additional 5 minutes to let the flavors meld, then remove from heat.
  6. Step 6: Serve hot, garnished with fresh parsley for a lovely touch!
