- Step 1: Start by rinsing the dried shiso leaves under cold water to remove any impurities.
- Step 2: Pat the leaves dry with a clean towel, then spread them out on a baking sheet.
- Step 3: Preheat your oven to 200°F (95°C). Place the baking sheet in the oven and dry the shiso leaves for about 1 hour, or until they are completely crisp.
- Step 4: Once dried, remove the shiso leaves from the oven and let them cool.
- Step 5: When cooled, crumble the shiso leaves into a fine powder using a food processor or mortar and pestle.
- Step 6: In a mixing bowl, combine the powdered shiso leaves, sea salt, toasted sesame seeds, and sugar (if using). Mix well to combine.
- Step 7: Store the Yukari seasoning in an airtight container in a cool, dry place.
Notes
Ensure the shiso leaves are completely dried to avoid any moisture in your seasoning. If you have leftovers, use them in soups or sprinkle over grilled meats for added flavor.
