  • 200 g udon noodles the star of the show
  • 2 tbsp vegetable oil for sautéing
  • 1 medium onion thinly sliced
  • 2 cloves garlic minced
  • 1 medium carrot julienned
  • 1 medium red bell pepper sliced
  • 100 g broccoli florets for healthy goodness
  • 100 g snap peas tender and slightly sweet
  • 3 tbsp soy sauce for umami flavor
  • 1 tbsp sesame oil adds nutty aroma
  • 1 tsp grated ginger for warmth and spice
  • 2 green onions chopped for garnish
  • Sesame seeds

Method
 

  1. Step 1: Cook the udon noodles according to the package instructions. Drain and set aside.
  2. Step 2: In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Step 3: Add the sliced onion and minced garlic, sautéing until the onion becomes translucent.
  4. Step 4: Add the carrot, red bell pepper, broccoli, and snap peas, and stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  5. Step 5: Stir in the cooked udon noodles, soy sauce, sesame oil, and grated ginger. Mix well to combine.
  6. Step 6: Cook for an additional 2-3 minutes, stirring frequently.
  7. Step 7: Remove from heat and garnish with chopped green onions and sesame seeds before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water or broth to keep the noodles moist.
