- Step 1: Cook the udon noodles according to the package instructions. Drain and set aside.
- Step 2: In a large skillet or wok, heat the vegetable oil over medium heat.
- Step 3: Add the sliced onion and minced garlic, sautéing until the onion becomes translucent.
- Step 4: Add the carrot, red bell pepper, broccoli, and snap peas, and stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
- Step 5: Stir in the cooked udon noodles, soy sauce, sesame oil, and grated ginger. Mix well to combine.
- Step 6: Cook for an additional 2-3 minutes, stirring frequently.
- Step 7: Remove from heat and garnish with chopped green onions and sesame seeds before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water or broth to keep the noodles moist.
