Ingredients
  

Ramen Base
  • 4 cups vegetable broth This serves as the flavorful base of your ramen.
  • 2 cups water Balances the broth and allows for a light soup.
  • 2 tbsp soy sauce Adds a savory umami flavor.
  • 1 tbsp miso paste A key ingredient for depth and richness.
  • 1 tsp sesame oil Brings a nutty aroma and taste.
Ramen Noodles
  • 2 packages ramen noodles Feel free to discard the flavor packets.
Vegetables
  • 1 cup sliced mushrooms Use shiitake or cremini for extra flavor.
  • 1 cup baby spinach Adds a vibrant color and nutrients.
  • 1 cup sliced carrots Sweet and crunchy, they add a nice texture.
  • 1 cup chopped green onions For that fresh, zesty finish.
  • 2 cloves garlic minced, a must for aroma and flavor.
  • 1 inch ginger grated, adds warmth and a hint of spice.
Optional Toppings
  • soft-boiled eggs optional, for serving.
  • tofu cubes optional, for serving.
  • sesame seeds for garnish.

Method
 

  1. Step 1: In a large pot, combine the vegetable broth, water, soy sauce, miso paste, and sesame oil. Bring to a simmer over medium heat.
  2. Step 2: Add the sliced mushrooms, baby spinach, sliced carrots, green onions, minced garlic, and grated ginger to the pot. Cook for 5-7 minutes, or until the vegetables are tender.
  3. Step 3: Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.
  4. Step 4: Once the vegetables are cooked, add the cooked ramen noodles to the pot and stir to combine.
  5. Step 5: Serve hot, topped with soft-boiled eggs, tofu cubes, and a sprinkle of sesame seeds if desired. Enjoy your cozy bowl of ramen!

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Keep noodles separate to prevent sogginess.
