Ingredients
  

For the Ume Plum Syrup
  • 1 kg ume plums unripe Japanese plums
  • 800 g sugar
  • 500 ml water
  • 1 cup rice vinegar optional

  • Fine Mesh Sieve or Cheesecloth

Method
 

  1. Step 1: Rinse the ume plums under cold water and carefully remove any stems.
  2. Step 2: In a large bowl, layer the ume plums and sugar, allowing the sugar to coat the plums. Cover the bowl and let it sit at room temperature for 24 hours.
  3. Step 3: After 24 hours, pour the water into the bowl with the plums and sugar. Stir gently until the sugar is completely dissolved.
  4. Step 4: If desired, add the rice vinegar and mix well.
  5. Step 5: Transfer the mixture to a clean glass jar or bottle, ensuring the plums are submerged in the syrup.
  6. Step 6: Seal the jar or bottle tightly and store it in a cool, dark place for at least one month.
  7. Step 7: After one month, strain the syrup through a fine mesh sieve or cheesecloth into a clean container, discarding the solids.
  8. Step 8: Store the resulting syrup in the refrigerator for up to six months.

Notes

Using unripe ume plums is recommended for the best flavor. The syrup can last up to six months if stored properly.
