Ingredients
  

For the Pickling Liquid
  • 1 cup rice vinegar This gives your pickles that signature tang.

For the Vegetables

Method
 

  1. Step 1: Start by preparing your vegetables. Wash them thoroughly and cut them into bite-sized pieces.
  2. Step 2: In a medium saucepan, combine the rice vinegar, water, sugar, and salt. Heat this mixture over medium heat, stirring gently until both the sugar and salt dissolve completely.
  3. Step 3: Once everything is dissolved, remove the saucepan from the heat and let the pickling liquid cool to room temperature.
  4. Step 4: While the liquid cools, place your prepared vegetables into a clean, sterilized jar. Layer them nicely for a pretty presentation.
  5. Step 5: Pour the cooled pickling liquid over the vegetables, ensuring they are fully submerged.
  6. Step 6: Seal the jar tightly and refrigerate for at least 4 hours, but overnight is best.
  7. Step 7: When you’re ready to enjoy, serve chilled as a refreshing side dish or a tasty condiment.

Notes

Store your Tsukemono in the refrigerator, where they'll last for about 1 to 2 weeks. The flavors will get even better as they sit!
