- Step 1: Start by preparing your vegetables and seafood. Cut them into uniform pieces to ensure even cooking.
- Step 2: In a mixing bowl, whisk together the ice-cold water and egg until well combined.
- Step 3: Gradually add in the flour and baking powder to the egg mixture. Mix gently until just combined; the batter should be lumpy, so resist the urge to overmix!
- Step 4: Heat oil in a deep frying pan or pot to 350°F (175°C). A thermometer is handy here to get the right temperature.
- Step 5: Dip your prepared vegetables and seafood into the batter, letting the excess drip off.
- Step 6: Carefully place the battered items into the hot oil, frying in small batches to prevent overcrowding and ensure even cooking.
- Step 7: Fry until golden and crispy, about 2-3 minutes per side.
- Step 8: Remove the tempura from the oil and drain on paper towels to absorb any excess oil. Season with salt and serve immediately with your favorite dipping sauce.
