  • 1 cup taro peeled and cubed

Method
 

  1. Step 1: In a pot, bring 4 cups of water to a boil. Add the tapioca pearls and cook according to package instructions until they become translucent. Once done, drain and rinse them under cold water. Set aside.
  2. Step 2: In another pot, steam the taro cubes until soft, about 15-20 minutes. Once cooked, mash the taro until smooth.
  3. Step 3: In a separate saucepan, combine the coconut milk, sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves, stirring occasionally.
  4. Step 4: Once the coconut milk mixture is heated, add the mashed taro and cooked tapioca pearls. Stir well to combine and heat until warm.
