Ingredients
  

For the Meatballs
  • 1 lb ground pork juicy and flavorful, perfect for meatballs

  • 1 tbsp soy sauce a staple for umami flavor

For the Hot Pot Ingredients

Method
 

  1. Step 1: In a large bowl, combine the ground pork, green onions, garlic, soy sauce, sesame oil, ginger, salt, black pepper, breadcrumbs, and beaten egg. Mix until everything is well combined. Form the mixture into small meatballs, about 1 inch in diameter, and set them aside.
  2. Step 2: In a large pot, combine the chicken or vegetable broth, water, soy sauce, miso paste, rice wine, ginger, garlic, green onions, and star anise. Bring the mixture to a boil over medium heat, then reduce to a simmer for 20 minutes to allow the flavors to meld. If desired, strain the broth to remove solids.
  3. Step 3: Carefully add the meatballs to the simmering broth and cook for about 10 minutes, or until they are fully cooked through.
  4. Step 4: Arrange your assorted vegetables, tofu, and noodles on a serving platter. Serve the hot pot broth in a communal pot at the table, allowing your guests to add their desired ingredients to cook in the broth.
  5. Step 5: Provide dipping sauces on the side so everyone can enjoy their cooked ingredients with a splash of flavor.

Notes

If you have leftovers, store the broth and ingredients separately in airtight containers. The broth can last in the refrigerator for up to 3 days, while the meatballs can be frozen for up to 3 months. Just reheat them gently in the broth when you're ready to enjoy them again!
