- Step 1: In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
- Step 2: Add the sliced pork belly to the pot and cook until browned.
- Step 3: Pour in the dashi stock and bring it to a gentle boil.
- Step 4: Stir in the miso paste and soy sauce until fully dissolved.
- Step 5: Add the gochujang and mix well.
- Step 6: Reduce the heat to a simmer and add the bean sprouts. Cook for about 5 minutes until they are tender.
- Step 7: Season with salt and pepper to taste.
- Step 8: Serve hot, garnished with chopped green onions and optional sliced chili peppers.
Notes
Store leftovers in an airtight container in the fridge for about 3 days. For best results, freeze without the bean sprouts.
