Ingredients
  

Cucumbers
  • 2 medium cucumbers Fresh, crunchy cucumbers are the star of the show!
Pickling Mixture
  • 1 tbsp salt This will help draw out moisture from the cucumbers.
  • 0.5 cup rice vinegar Adds a tangy flavor that balances perfectly with the sweetness.
  • 0.25 cup sugar This brings a delightful sweetness that complements the vinegar.
  • 1 tbsp soy sauce Adds depth and umami to the pickling mix.
  • 1 tsp chili flakes For that spicy kick you can control.
  • 1 tsp sesame oil A touch of nuttiness that enhances all the flavors.
  • 1 clove garlic minced
  • 1 tsp grated ginger Adds warmth and a hint of spice.

Method
 

  1. Step 1: Start by washing and thinly slicing the cucumbers. You want them nice and crisp, so a mandolin works wonders here if you have one!
  2. Step 2: Place the cucumber slices in a bowl and sprinkle them with salt. Toss to coat, and let them sit for about 15 minutes. This step is crucial for drawing out excess moisture.
  3. Step 3: While the cucumbers are resting, grab a separate bowl and mix together the rice vinegar, sugar, soy sauce, chili flakes, sesame oil, minced garlic, and grated ginger. Stir until the sugar dissolves completely.
  4. Step 4: After 15 minutes, rinse the salted cucumbers under cold water to remove excess salt, then drain them well.
  5. Step 5: Add the cucumbers to the vinegar mixture, making sure they’re fully submerged. If you like, you can give them a gentle toss to ensure every slice is coated.
  6. Step 6: Cover the bowl and pop it in the refrigerator for at least 1 hour before serving. For the best flavor, let them marinate for several hours or even overnight!

Notes

Store your pickled cucumbers in an airtight container in the refrigerator. They will last for about a week, but I promise they won’t last that long! The longer they sit, the more flavorful they become.
