Method
 

  1. Step 1: In a large mixing bowl, combine the buckwheat flour and all-purpose flour.
  2. Step 2: Gradually add the water, mixing with your hands or a wooden spoon until the dough begins to come together.
  3. Step 3: Add a pinch of salt and knead the dough for about 5-10 minutes until it is smooth and elastic.
  4. Step 4: Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
  5. Step 5: After resting, roll out the dough on a lightly floured surface to a thickness of about 1/8 inch.
  6. Step 6: Cut the rolled dough into thin strips to form the noodles.
  7. Step 7: Bring a pot of water to a boil and add the soba noodles. Cook for 4-5 minutes or until tender.
  8. Step 8: Drain the noodles and rinse under cold water to stop the cooking process.

Notes

Don’t skip the resting time for the dough; it really makes a difference in the texture. Store any cooked noodles in an airtight container for up to 3 days.
