- Step 1: Cook the soba noodles according to package instructions. Once cooked, drain and set aside.
- Step 2: In a large pot, bring the vegetable or chicken broth to a simmer over medium heat.
- Step 3: Stir in the soy sauce and miso paste (if using) until fully dissolved.
- Step 4: Add the sliced mushrooms, bok choy, and carrot to the broth. Simmer for 5-7 minutes until the vegetables are tender.
- Step 5: Gently stir in the cooked soba noodles and drizzle with sesame oil.
- Step 6: Serve the soup hot, garnished with chopped green onion and fresh cilantro. If you like some heat, sprinkle red pepper flakes on top!
Notes
To store leftover soba noodle soup, let it cool completely before transferring it to an airtight container. It can be kept in the refrigerator for up to 3 days.
