- Step 1: In a bowl, combine the salmon fillets and shio koji. Ensure the salmon is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Step 2: Preheat the oven to 400°F (200°C).
- Step 3: Remove the salmon from the refrigerator and rinse off the shio koji gently under cold water. Pat the fillets dry with paper towels.
- Step 4: Heat olive oil in an oven-safe skillet over medium-high heat. Season the salmon fillets with salt and pepper.
- Step 5: Place the salmon fillets skin-side down in the skillet and sear for about 3-4 minutes until the skin is crispy.
- Step 6: Carefully flip the fillets and transfer the skillet to the preheated oven. Bake for an additional 5-7 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Step 7: Remove from the oven and let rest for a couple of minutes. Serve with lemon wedges and garnish with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the fridge for about 2 days. Reheat gently to maintain texture and flavor.
