Ingredients
  

For the Hot Pot Base
  • 200 g thinly sliced beef or pork Choose your favorite meat.
  • 1 cup napa cabbage cut into bite-sized pieces
  • 1 cup shiitake mushrooms sliced
  • 1 cup tofu cut into cubes
  • 1 cup green onions cut into 2-inch lengths
  • 1 cup carrots thinly sliced
  • 4 cups dashi broth or water Dashi adds rich umami flavor.
For Dipping Sauces
  • soy sauce
  • ponzu sauce
  • sesame seeds

Method
 

  1. Step 1: In a pot, bring the dashi broth or water to a gentle simmer over medium heat.
  2. Step 2: Arrange the sliced beef or pork, napa cabbage, shiitake mushrooms, tofu, green onions, and carrots on a large platter.
  3. Step 3: Once the broth is simmering, add the vegetables and tofu to the pot. Cook for a few minutes until tender.
  4. Step 4: Add the sliced meat to the pot, swishing it around in the broth until cooked through.
  5. Step 5: Serve the cooked ingredients with dipping sauces, such as soy sauce and ponzu sauce.
  6. Step 6: Garnish with sesame seeds and enjoy!

Notes

If you have leftovers, you can store them in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove, adding a splash of water to keep the broth flavorful.
