Senmaizuke: A Refreshing Japanese Pickled Salad

Ingredients
  

For the Senmaizuke
  • 1 medium carrot julienned
  • 1 medium daikon radish julienned
  • 1 small cucumber julienned
  • 1 tbsp salt
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Method
 

  1. Step 1: In a mixing bowl, combine the julienned carrot, daikon radish, and cucumber. Sprinkle with salt and toss to coat evenly. Let sit for about 15 minutes to draw out moisture.
  2. Step 2: In a separate bowl, whisk together the rice vinegar, sugar, soy sauce, and sesame oil until the sugar is dissolved.
  3. Step 3: After 15 minutes, drain any excess liquid from the vegetables.
  4. Step 4: Pour the vinegar mixture over the vegetables and toss to combine thoroughly.
  5. Step 5: Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.

Notes

Store your Senmaizuke in an airtight container in the refrigerator. It will keep well for about a week.
