- Step 1: Start by bringing a medium pot of salted water to a boil. Once boiling, add your mixed seafood. Cook for about 3-5 minutes until fully cooked. Don't overcook; we want it tender, not rubbery!
- Step 2: Once done, drain the seafood and let it cool. Meanwhile, in a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, olives, and parsley.
- Step 3: In a separate bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
- Step 4: Add the cooled seafood to the salad mixture. Drizzle the vinaigrette over the top and toss gently to combine.
- Step 5: Serve immediately for a fresh experience, or refrigerate for up to 30 minutes to let the flavors meld.
Notes
This salad is best enjoyed fresh, but you can store leftovers in an airtight container in the refrigerator for up to two days.
