- Step 1: In a large bowl, combine the chopped Napa cabbage with water and sea salt. Let it sit for about 30 minutes, tossing occasionally, until the cabbage softens.
- Step 2: Rinse the cabbage thoroughly under cold water to remove excess salt. Drain and set aside.
- Step 3: In a separate bowl, mix together the grated ginger, minced garlic, fish sauce, sugar, and Korean red pepper flakes to create the kimchi paste.
- Step 4: Add the drained cabbage, chopped green onions, and julienned carrot to the kimchi paste. Mix well until all the vegetables are coated evenly.
- Step 5: Transfer the mixture to a clean, airtight container. Press down to remove any air bubbles and seal.
- Step 6: Allow the kimchi to ferment at room temperature for 1-2 days, then refrigerate. Enjoy your kimchi within a week for the best flavor.
Notes
Once your kimchi is ready, store it in an airtight container in the refrigerator. It will keep well for about a week, but it’s best enjoyed within the first few days for optimal crunch and flavor.
