- Step 1: In a large pot, melt the butter over medium heat. Add the sliced leeks and sauté until they are soft, about 5 minutes.
- Step 2: Add the diced potatoes to the pot and stir to combine with the leeks.
- Step 3: Pour in the broth and bring the mixture to a boil. Reduce heat and let it simmer until the potatoes are tender, about 20 minutes.
- Step 4: Using an immersion blender, puree the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches and blend until smooth, then return it to the pot.
- Step 5: Stir in the heavy cream and season with salt and pepper to taste. Heat through without boiling.
- Step 6: Serve hot, garnished with chopped chives and enjoy this cozy treat!
Notes
For a lighter version, swap heavy cream for half-and-half or a plant-based cream. This soup can be stored in the fridge for up to 3-4 days.
