Ingredients
  

For the Pork Tofu Soup
  • 300 g pork shoulder thinly sliced
  • 200 g firm tofu cubed
  • 4 cups chicken or pork broth
  • 2 cups water
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 green onions chopped
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper
  • Optional: chili flakes

Method
 

  1. Step 1: In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
  2. Step 2: Add the sliced pork to the pot and cook until browned, letting the meat soak up the flavor of the garlic and ginger.
  3. Step 3: Pour in the chicken or pork broth and water. Bring the mixture to a boil.
  4. Step 4: Once boiling, reduce the heat to a simmer and gently add the cubed tofu.
  5. Step 5: Stir in the soy sauce, seasoning with salt, pepper, and chili flakes if you desire a touch of heat.
  6. Step 6: Let it simmer for about 15-20 minutes, allowing all those lovely flavors to meld together.
  7. Step 7: Remove from heat and stir in the chopped green onions just before serving for a fresh finish.

Notes

This soup stores beautifully! Let it cool completely before transferring to an airtight container. Store in the refrigerator for up to 3 days or freeze for up to 2 months.
