- Step 1: In a large pot, combine the oxtail and water. Bring it to a boil, then reduce the heat and let it simmer for about 2 hours, skimming off any foam that rises to the surface.
- Step 2: Add the onion, garlic, ginger, soy sauce, miso paste, sake, and mirin to the pot. Continue to simmer for another hour until the oxtail is tender and flavorful.
- Step 3: Stir in the fish cakes, carrots, and daikon radishes. Cook for another 20-30 minutes, or until the vegetables are tender.
- Step 4: Season with salt and pepper to taste.
- Step 5: Garnish with chopped green onions before serving.
Notes
Leftovers are just as good, so make a little extra for lunch! This stew can be made a day ahead; the flavors deepen and improve overnight.
