Ingredients

For the Myoga Amazuzuke
  • 200 g myoga (Japanese ginger) adds a lovely crunch and mild spiciness
  • 100 ml rice vinegar balances the sweetness perfectly
  • 50 g sugar enhances the ginger's natural flavors
  • 1 tsp salt elevates all the flavors

Method

  1. Step 1: Rinse the myoga thoroughly under cold water to remove any dirt. Then, slice it thinly.
  2. Step 2: In a mixing bowl, combine the rice vinegar, sugar, and salt. Stir until both the sugar and salt are fully dissolved.
  3. Step 3: Add the sliced myoga to the vinegar mixture, ensuring that all the pieces are fully submerged.
  4. Step 4: Let the myoga marinate for at least 10 minutes before serving.
  5. Step 5: Store leftovers in an airtight container in the refrigerator.

Notes

Store in an airtight container in the refrigerator for about a week. The flavors will continue to develop over time.
