Ingredients
  

For the Mochi
  • 1 cup glutinous rice (sweet rice) providing that signature chewy texture
  • 1 cup water essential for soaking and steaming the rice
  • Cornstarch or potato starch
  • Optional fillings

Method
 

  1. Step 1: Rinse the glutinous rice under cold water until the water runs clear to remove excess starch.
  2. Step 2: Soak the rice in water for at least 8 hours or overnight to achieve the perfect texture.
  3. Step 3: Drain the rice and place it in a steamer lined with cheesecloth. Steam the rice for about 30-40 minutes until it becomes translucent and sticky.
  4. Step 4: Transfer the steamed rice to a large bowl and mash it using a pestle or your hands until you have a smooth, sticky dough.
  5. Step 5: Dust your working surface with cornstarch or potato starch to prevent sticking. Shape the mochi dough into discs or your desired shape.
  6. Step 6: If adding fillings, flatten the mochi disc, place a small amount of filling in the center, and fold the edges over to seal.
  7. Step 7: Roll the formed mochi in cornstarch or potato starch to prevent sticking. Repeat with remaining dough and fillings.
  8. Step 8: Serve your mochi immediately or store in an airtight container at room temperature for up to a few days.
