Ingredients
  

For the Mizutaki
  • 1 whole chicken cut into pieces
  • 8 cups dashi broth or chicken stock
  • 1 cup sake
  • 1 cup soy sauce
  • 2 tbsp mirin
  • 1 lb napa cabbage chopped
  • 1 lb shiitake mushrooms sliced
  • 1 lb tofu cut into cubes
  • 1 lb carrots sliced
  • 1 bunch green onions chopped
  • 1 lb udon noodles optional
For Serving
  • ponzu sauce
  • sesame seeds

Method
 

  1. Step 1: In a large pot, combine the dashi broth, sake, soy sauce, and mirin. Bring this aromatic mixture to a simmer over medium heat.
  2. Step 2: Add the chicken pieces to the pot and cook until they are no longer pink, about 15 minutes.
  3. Step 3: Stir in the napa cabbage, shiitake mushrooms, tofu, and sliced carrots. Let these cook for an additional 10-15 minutes until the vegetables are tender and flavorful.
  4. Step 4: If you're using udon noodles, cook them according to package instructions, then set aside.
  5. Step 5: Serve the hot pot in individual bowls, garnished with chopped green onions and sesame seeds. Don’t forget to offer ponzu sauce on the side for dipping!

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days.
