Ingredients
  

For the Miso Soup
  • 4 cups dashi Japanese soup stock
  • 1/2 cup miso paste white or red
  • 1 cup tofu cubed
  • 1 cup seaweed (wakame) rehydrated
  • 2 pcs green onions chopped

  • additional protein of choice

Method
 

  1. Step 1: In a pot, bring the dashi to a gentle simmer over medium heat.
  2. Step 2: In a separate bowl, mix the miso paste with a small amount of the warm dashi until smooth.
  3. Step 3: Add the miso mixture back into the pot with the remaining dashi, stirring to combine.
  4. Step 4: Gently add the cubed tofu and rehydrated seaweed to the pot. If using additional vegetables or protein, add them now.
  5. Step 5: Simmer for 2-3 minutes until the tofu is heated through and the ingredients are well combined.
  6. Step 6: Remove from heat and stir in the chopped green onions just before serving.
  7. Step 7: Serve hot and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove, adding a splash of water if needed.
