Ingredients
  

For the Miso Glaze
  • 2 medium eggplants
  • 3 tbsp miso paste white or yellow
  • 2 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger
  • 1 tsp minced garlic
For Garnish
  • sesame seeds
  • chopped green onions

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C). This step is crucial for getting that perfect caramelization.
  2. Step 2: Cut the eggplants in half lengthwise and score the flesh in a diamond pattern without cutting through the skin.
  3. Step 3: In a bowl, combine the miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, ginger, and garlic. Mix until smooth.
  4. Step 4: Brush the miso glaze generously over the cut sides of the eggplant.
  5. Step 5: Place the eggplants cut side up on a baking sheet lined with parchment paper.
  6. Step 6: Roast in the preheated oven for 25-30 minutes, or until the eggplants are tender and the glaze is caramelized.
  7. Step 7: Remove from the oven and let cool slightly.
  8. Step 8: Garnish with sesame seeds and chopped green onions before serving.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for the best texture.
