Ingredients
  

For the Madeleines
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter melted and cooled
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon optional
  • Powdered sugar for dusting optional

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C). Grease a madeleine pan with butter or cooking spray and dust with flour, tapping out the excess.
  2. Step 2: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Step 3: In a large bowl, whisk the eggs and granulated sugar until pale and frothy, about 5 minutes.
  4. Step 4: Stir in the melted butter, vanilla extract, and lemon zest (if using) until well combined.
  5. Step 5: Gently fold the dry ingredients into the egg mixture until just combined.
  6. Step 6: Spoon the batter into the prepared madeleine pan, filling each mold about three-quarters full.
  7. Step 7: Bake for 10-12 minutes, or until the edges are golden brown and the centers spring back when lightly touched.
  8. Step 8: Remove from the oven and let the madeleines cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  9. Step 9: Dust with powdered sugar before serving, if desired. Enjoy these delightful treats!

Notes

Store madeleines in an airtight container at room temperature for up to 3 days, or freeze them for up to a month.
