- Step 1: Preheat your oven to 375°F (190°C). Grease a madeleine pan with butter or cooking spray and dust with flour, tapping out the excess.
- Step 2: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- Step 3: In a large bowl, whisk the eggs and granulated sugar until pale and frothy, about 5 minutes.
- Step 4: Stir in the melted butter, vanilla extract, and lemon zest (if using) until well combined.
- Step 5: Gently fold the dry ingredients into the egg mixture until just combined.
- Step 6: Spoon the batter into the prepared madeleine pan, filling each mold about three-quarters full.
