- Step 1: In a pot, combine the dashi broth, soy sauce, mirin, sake, and sugar. Stir to mix well.
- Step 2: Add the ginger slices and green onions to the pot.
- Step 3: Bring the mixture to a simmer over medium heat.
- Step 4: Carefully add the whole kinmedai to the pot, ensuring it is submerged in the liquid.
- Step 5: Cover the pot and reduce the heat to low. Let it braise for about 20-25 minutes, or until the fish is cooked through and tender.
- Step 6: If using sesame oil, drizzle it over the fish before serving.
- Step 7: Serve the braised kinmedai with the sauce and vegetables on the side.
