Ingredients

  • 1 cup rice jasmine or basmati recommended
  • 2 cups water
  • 1 tbsp olive oil for cooking rice
  • 1 tsp salt to enhance flavors
  • 1 tsp black pepper for flavor
  • 1 cup mixed vegetables carrots, peas, bell peppers
  • 1 tbsp soy sauce for savory flavor
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • Fresh herbs for garnish (optional)

Method
 

  1. Step 1: Start by rinsing the rice under cold water until it runs clear. Drain and set it aside.
  2. Step 2: In a medium saucepan, bring 2 cups of water to a boil. Add the rice, olive oil, salt, and black pepper. Stir to combine.
  3. Step 3: Reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes or until the rice is fully cooked and the water is absorbed.
  4. Step 4: While the rice is cooking, heat a small amount of olive oil in a separate skillet over medium heat. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  5. Step 5: Add the mixed vegetables to the skillet and cook for another 5-7 minutes, or until they're tender.
  6. Step 6: Stir in the soy sauce and cook for an additional minute, allowing the flavors to meld.
  7. Step 7: Fluff the cooked rice with a fork and combine it with the vegetable mixture in the skillet.
  8. Step 8: Serve hot, garnished with fresh herbs if desired.

Notes

This dish is great for meal prep! Store any leftovers in an airtight container in the fridge for up to 3 days.
