Ingredients
  

For the Rice
  • 1 cup short-grain rice rinsed
  • 1.25 cups water
For the Tofu and Vegetables
  • 1 block firm tofu drained and cubed
  • 1 cup mixed vegetables carrots, bell peppers, and broccoli recommended
  • 2 green onions chopped
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp miso paste
  • 1 tbsp vegetable oil
  • 1 tbsp rice vinegar
For Garnish
  • sea salt
  • sesame seeds

Method
 

  1. Step 1: Rinse the short-grain rice under cold water until the water runs clear, then drain well.
  2. Step 2: In a medium saucepan, combine the rinsed rice and water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 10 minutes.
  3. Step 3: Heat vegetable oil in a large skillet over medium heat. Add cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  4. Step 4: In the same skillet, stir-fry mixed vegetables for about 5 minutes until tender but still vibrant.
  5. Step 5: In a small bowl, mix together soy sauce, sesame oil, miso paste, and rice vinegar until well combined.
  6. Step 6: Return the tofu to the skillet, pour the sauce over the mixture, and cook for an additional 2-3 minutes, stirring to coat evenly.
  7. Step 7: Fluff the cooked rice with a fork and serve topped with the tofu and vegetable mixture.
  8. Step 8: Garnish with chopped green onions and sesame seeds, and season with sea salt to taste.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. This dish also freezes well for quick meals later.
