- Step 1: Rinse the short-grain rice under cold water until the water runs clear, then drain well.
- Step 2: In a medium saucepan, combine the rinsed rice and water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 10 minutes.
- Step 3: Heat vegetable oil in a large skillet over medium heat. Add cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- Step 4: In the same skillet, stir-fry mixed vegetables for about 5 minutes until tender but still vibrant.
- Step 5: In a small bowl, mix together soy sauce, sesame oil, miso paste, and rice vinegar until well combined.
- Step 6: Return the tofu to the skillet, pour the sauce over the mixture, and cook for an additional 2-3 minutes, stirring to coat evenly.
- Step 7: Fluff the cooked rice with a fork and serve topped with the tofu and vegetable mixture.
- Step 8: Garnish with chopped green onions and sesame seeds, and season with sea salt to taste.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. This dish also freezes well for quick meals later.
