Japanese Summer Festival Foods

Ingredients
  

For Takoyaki
  • Takoyaki sauce
  • Aonori
  • Bonito flakes
For Yakitori
  • Green onions
  • Bamboo skewers
For Yaki Imo
  • Salt

Method
 

  1. Step 1: For Takoyaki, mix the flour, dashi broth, and egg until smooth. Heat a takoyaki grill pan and lightly oil the molds. Pour the batter into the molds, filling them halfway. Add diced octopus, green onions, and pickled ginger into each mold. Once the edges begin to cook, use a skewer to turn the balls until they are golden brown and cooked through. Serve with takoyaki sauce, aonori, and bonito flakes on top.
  2. Step 2: For Yakitori, combine soy sauce, sake, mirin, and sugar in a saucepan. Bring to a simmer and cook until slightly thickened. Thread chicken pieces and green onion onto bamboo skewers. Grill the skewers over medium heat, basting with the sauce, until the chicken is cooked through and caramelized. Serve hot.
  3. Step 3: For Yaki Imo, preheat the oven to 400°F (200°C). Wash the sweet potatoes and pat dry. Optionally, sprinkle with salt. Place the sweet potatoes directly on the oven rack or a baking sheet. Bake for 45-60 minutes, or until tender when pierced with a fork. Serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days for Takoyaki, about 2 days for Yakitori, and up to a week for Yaki Imo. Reheat gently for best results.
