Ingredients
  

For the Japanese Noodles
  • 200 g soba noodles
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 1 piece spring onion finely chopped
  • 1 piece carrot julienned
  • 100 g bok choy chopped
  • 2 cloves garlic minced
  • 1 tbsp vegetable oil
For Garnish
  • sesame seeds

Method
 

  1. Step 1: Start by cooking the soba noodles according to the package instructions. Once cooked, drain and set them aside.
  2. Step 2: In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Step 3: Add the julienned carrot and chopped bok choy to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender.
  4. Step 4: Add the cooked soba noodles. Pour in the soy sauce, mirin, and sesame oil. Toss everything together until well combined and heated through.
  5. Step 5: Remove from heat and garnish with chopped spring onion and a sprinkle of sesame seeds before serving. Enjoy your delicious creation!

Notes

Store any leftovers in an airtight container in the fridge for up to 2 days. To reheat, simply toss everything back in a skillet with a splash of water to loosen it up.
