- Step 1: Heat the vegetable oil in a large pot over medium heat.
- Step 2: Add the diced onion and sauté until translucent and fragrant.
- Step 3: Stir in the chicken pieces and cook until they are browned on all sides.
- Step 4: Toss in the sliced carrots and diced potatoes, cooking for about 2-3 minutes.
- Step 5: Pour in the water and bring everything to a boil. Then, reduce the heat and let it simmer for 15-20 minutes until the vegetables are tender.
- Step 6: Break the curry roux into pieces and stir it into the pot until fully dissolved.
- Step 7: Add the soy sauce and honey (if using), mixing well to combine all those wonderful flavors.
- Step 8: Let it simmer for another 10 minutes, stirring occasionally, until the curry thickens up beautifully.
- Step 9: Serve hot over a fluffy bed of cooked rice and sprinkle with chopped green onions if you like.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, simply warm it on the stove or in the microwave until heated through. You can also freeze it for later enjoyment; it should keep well for up to 3 months!
