- Step 1: In the bowl of your stand mixer, combine the glutinous rice flour, water, and granulated sugar.
- Step 2: Attach the paddle attachment and mix on low speed until everything is well combined.
- Step 3: Increase the speed to medium and mix for an additional 2-3 minutes until the batter is smooth and creamy.
- Step 4: Transfer the mixture to a microwave-safe bowl.
- Step 5: Cover the bowl with plastic wrap, making sure to leave a small vent for steam to escape.
- Step 6: Microwave on high for 1 minute. Stir the mixture, then cover and microwave for another 1 minute.
- Step 7: Stir again, then microwave for an additional 30 seconds. The mochi should be sticky and slightly translucent.
- Step 8: Dust a clean surface with cornstarch or potato starch. Pour the mochi mixture onto the surface and dust the top with more starch.
- Step 9: With your hands dusted with starch, flatten and shape the mochi as desired.
- Step 10: Allow the mochi to cool before cutting into pieces or shaping into balls. Dust with additional starch to prevent sticking.
Notes
Store in an airtight container at room temperature for up to 2 days, or in the fridge for up to a week. Freeze leftovers for later enjoyment.
