- Step 1: Combine diced eggplant, daikon radish, carrot, and cucumber in a large bowl. Sprinkle with salt and mix well. Let sit for about 30 minutes to draw out excess moisture.
- Step 2: Rinse the vegetables under cold water to remove excess salt. Drain and pat dry with a paper towel.
- Step 3: In a saucepan, combine rice vinegar, sugar, soy sauce, and mirin (if using). Heat over medium heat, stirring until sugar dissolves. Remove from heat and let cool.
- Step 4: Once the vinegar mixture is cool, add prepared vegetables, konbu, and shichimi togarashi. Stir to ensure vegetables are well-coated with pickling liquid.
- Step 5: Transfer the mixture to a clean, airtight container. Seal and refrigerate for at least 24 hours before serving.
- Step 6: Serve as a side dish with Japanese curry or store in the refrigerator for up to two weeks.
