- Step 1: In a small saucepan, combine soy sauce, mirin, sake, and sugar. Heat over medium heat until the sugar dissolves, then bring to a simmer. Remove from heat and set aside.
- Step 2: Heat a non-stick skillet over medium-high heat. Place the Hamachi fillets skin-side down in the skillet and cook for 3-4 minutes until the skin is crispy.
- Step 3: Flip the fillets and pour the teriyaki sauce over them. Cook for an additional 3-4 minutes, basting the fish with the sauce until it is cooked through and nicely glazed.
- Step 4: In a separate bowl, mix the unsalted butter with yuzu kosho until well combined.
- Step 5: Once the fish is cooked, remove it from the skillet and place it on serving plates. Top with a dollop of the yuzu kosho butter.
- Step 6: Garnish with chopped green onions and sesame seeds before serving.
Notes
This dish is best enjoyed fresh, but you can store any leftovers in an airtight container in the fridge for up to 2 days.
