Green Tea Mochi

Ingredients
  

For the Mochi
  • 1 cup glutinous rice flour
  • 1/2 cup water
  • 2 tbsp sugar
  • 1 tbsp matcha green tea powder
For Dusting and Filling
  • Cornstarch for dusting
  • Sweet red bean paste for filling

Equipment

  • Microwave-safe Dish
  • Plastic Wrap

Method
 

  1. Step 1: In a mixing bowl, combine the glutinous rice flour, sugar, and matcha green tea powder.
  2. Step 2: Gradually add water to the dry ingredients, stirring until smooth.
  3. Step 3: Transfer the mixture to a microwave-safe dish and cover with plastic wrap.
  4. Step 4: Microwave on high for 1 minute, stir, cover again, and microwave for another minute. Stir once more, then microwave for a final 30 seconds.
  5. Step 5: Let the mixture cool slightly, then dust a surface with cornstarch.
  6. Step 6: Transfer the mochi mixture to the surface and dust with more cornstarch, flattening into a rectangle or square.
  7. Step 7: Cut the flattened mochi into small squares or circles.
  8. Step 8: Place a small amount of sweet red bean paste in the center of each piece, fold over, and pinch to seal.
  9. Step 9: Roll finished mochi in cornstarch to prevent sticking and serve.

Notes

Store in an airtight container at room temperature for up to three days, or refrigerate with cornstarch to prevent sticking.
