Method
- Step 1: Rinse the rice under cold water until the water runs clear. Drain and set aside.
- Step 2: In a pot, heat the sesame oil over medium heat. Add the sliced gobo and sauté for about 3-4 minutes until slightly tender.
- Step 3: In a separate bowl, mix the miso paste with a small amount of dashi broth to create a smooth mixture.
- Step 4: Add the rinsed rice to the pot with gobo, followed by the miso mixture, remaining dashi broth, soy sauce, and mirin (if using). Stir gently to combine.
- Step 5: Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes.
- Step 6: Remove from heat and let it sit, covered, for an additional 10 minutes.
- Step 7: Fluff the rice with a fork and garnish with chopped green onion before serving.
Notes
This dish can be made ahead of time and reheated. It tastes even better the next day as the flavors deepen.
