- Step 1: Start by bringing 4 cups of water to a boil in a large pot.
- Step 2: Add the gluten-free rice noodles to the boiling water and cook according to the package instructions until tender. Once done, drain and set aside.
- Step 3: In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Step 4: Add the mixed vegetables to the skillet and stir-fry for about 5-7 minutes until they are tender.
- Step 5: Next, add the cooked noodles to the skillet, along with the soy sauce. Toss to combine and heat everything through.
- Step 6: Finally, season with salt and pepper to taste.
- Step 7: Serve hot, garnished with chopped green onions and sesame seeds, if desired. Enjoy!
Notes
Store any leftover noodles in an airtight container in the fridge for up to 3 days. When reheating, add a little water or broth to maintain the moisture and flavor.
