Ingredients
  

For the Ekiben
  • 2 cups cooked rice white or brown
  • 100 g grilled chicken breast sliced
  • 100 g tamagoyaki Japanese omelette, sliced
  • 100 g pickled vegetables such as pickled cucumber and radish
  • 50 g steamed broccoli
  • 50 g cherry tomatoes
  • 1 sheet nori cut into strips
  • soy sauce for serving
  • sesame seeds for garnish

Method
 

  1. Step 1: Prepare the rice according to package instructions. Once cooked, let it cool slightly.
  2. Step 2: In a bento box or compartmentalized container, place a portion of rice in one section.
  3. Step 3: Arrange the sliced grilled chicken breast next to the rice.
  4. Step 4: Place the sliced tamagoyaki beside the chicken.
  5. Step 5: Add the pickled vegetables in another section of the bento box.
  6. Step 6: Include the steamed broccoli and cherry tomatoes in separate compartments.
  7. Step 7: Garnish the rice with nori strips and sprinkle sesame seeds on top.
  8. Step 8: Serve with soy sauce on the side for dipping.

Notes

If you have leftovers, store them in an airtight container in the refrigerator. It’s best to eat it within 2 days for optimal flavor and freshness.
