- Step 1: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the pork slices and stir-fry for about 5-7 minutes, or until they're browned and cooked through. Remove the pork from the pan and set it aside.
- Step 2: In the same skillet, add the remaining tablespoon of vegetable oil. Toss in the eggplant pieces and stir-fry until they become tender, which should take about 5 minutes.
- Step 3: Add the minced garlic and ginger to the eggplant, and stir-fry for an additional 1-2 minutes until fragrant.
- Step 4: Return the cooked pork to the skillet. Pour in the soy sauce, oyster sauce, rice vinegar, and sugar. Stir everything together and let it cook for another 2-3 minutes until heated through.
- Step 5: Season with salt and pepper to taste.
- Step 6: Garnish with the chopped green onions before serving.
Notes
If you have leftovers, store them in an airtight container in the fridge for up to 3 days. You can reheat it on the stovetop or in the microwave, but be careful not to overcook the eggplant!
