Ingredients
  

For the Fruitcake
  • 2 cups mixed dried fruit (raisins, currants, cherries)
  • 1 cup chopped nuts (walnuts, pecans, or almonds)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup orange juice

Method
 

  1. Step 1: Preheat your oven to 325°F (160°C). Grease and flour a 9x5-inch loaf pan.
  2. Step 2: In a medium bowl, combine the mixed dried fruit and chopped nuts. Set aside.
  3. Step 3: In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  4. Step 4: In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy.
  5. Step 5: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and orange juice.
  6. Step 6: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Step 7: Fold in the fruit and nut mixture until evenly distributed throughout the batter.
  8. Step 8: Pour the batter into the prepared loaf pan and smooth the top.
  9. Step 9: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Step 10: Allow the fruitcake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Fruits can be substituted with your favorites, and chocolate chips or a splash of brandy can be added for extra flavor. Store well wrapped at room temperature for up to a week.
