- Step 1: Preheat your oven to 325°F (160°C). Grease and flour a 9x5-inch loaf pan.
- Step 2: In a medium bowl, combine the mixed dried fruit and chopped nuts. Set aside.
- Step 3: In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- Step 4: In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy.
- Step 5: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and orange juice.
- Step 6: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Step 7: Fold in the fruit and nut mixture until evenly distributed throughout the batter.
- Step 8: Pour the batter into the prepared loaf pan and smooth the top.
- Step 9: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Step 10: Allow the fruitcake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Fruits can be substituted with your favorites, and chocolate chips or a splash of brandy can be added for extra flavor. Store well wrapped at room temperature for up to a week.
