- Step 1: In a pot, bring the dashi stock to a simmer over medium heat.
- Step 2: Add the daikon radish and carrot to the pot, cooking until they begin to soften—about 5 to 7 minutes.
- Step 3: Toss in the shiitake mushrooms and continue to simmer for another 3 to 4 minutes.
- Step 4: Cut the salmon fillet into bite-sized pieces and gently add it to the pot, cooking until just cooked through, about 5 minutes.
- Step 5: In a small bowl, mix the soy sauce, miso paste, and sake until smooth, then stir this mixture into the soup.
- Step 6: Season with sea salt to taste and serve hot, garnished with chopped green onions.
Notes
Let the soup cool completely before storing in an airtight container. It can be kept in the fridge for up to 3 days.
