- Step 1: In a large pot, heat some oil over medium heat. Sauté the onions and garlic until fragrant.
- Step 2: Add the oxtail and brown on all sides, letting those savory flavors develop.
- Step 3: Pour in the water and bring to a boil. Reduce heat to low and let it simmer for about 2-3 hours, or until the meat is tender.
- Step 4: Once the oxtail is tender, remove it from the pot and set aside. Strain the broth and reserve it.
- Step 5: In the same pot, heat a little more oil and add the annatto seeds. Cook until the oil turns a vibrant orange.
- Step 6: Stir in the peanut butter and ground rice, then slowly add the reserved broth, stirring to combine.
- Step 7: Return the oxtail to the pot and simmer for about 15 minutes. Season with salt and pepper to taste.
- Step 8: Add the banana heart, eggplant, and green beans. Cook until the vegetables are tender.
- Step 9: Serve hot with shrimp paste on the side, and enjoy!
Notes
It can be stored in the refrigerator for up to 3 days. For longer storage, freeze it for up to 2 months. Just thaw it overnight in the fridge before reheating!
