Delicious Kare Kare: A Heartwarming Filipino Classic

Ingredients
  

For the Kare Kare
  • 1 kg oxtail or beef shank
  • 1/2 cup peanut butter
  • 1/4 cup ground rice
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1/2 tsp annatto seeds
  • 1/4 cup shrimp paste bagoong
  • 4 cups water
  • 1 cup banana heart sliced
  • 1 cup eggplant sliced
  • 1 cup green beans trimmed
  • to taste salt and pepper for seasoning
  • cooking oil for sautéing the aromatics

Method
 

  1. Step 1: In a large pot, heat some oil over medium heat. Sauté the onions and garlic until fragrant.
  2. Step 2: Add the oxtail and brown on all sides, letting those savory flavors develop.
  3. Step 3: Pour in the water and bring to a boil. Reduce heat to low and let it simmer for about 2-3 hours, or until the meat is tender.
  4. Step 4: Once the oxtail is tender, remove it from the pot and set aside. Strain the broth and reserve it.
  5. Step 5: In the same pot, heat a little more oil and add the annatto seeds. Cook until the oil turns a vibrant orange.
  6. Step 6: Stir in the peanut butter and ground rice, then slowly add the reserved broth, stirring to combine.
  7. Step 7: Return the oxtail to the pot and simmer for about 15 minutes. Season with salt and pepper to taste.
  8. Step 8: Add the banana heart, eggplant, and green beans. Cook until the vegetables are tender.
  9. Step 9: Serve hot with shrimp paste on the side, and enjoy!

Notes

It can be stored in the refrigerator for up to 3 days. For longer storage, freeze it for up to 2 months. Just thaw it overnight in the fridge before reheating!
