For the Clam Pasta
  • 400 g spaghetti or linguine Choose your favorite pasta for a perfect base.

  • 4 cloves garlic minced
  • 1 tsp red pepper flakes optional, for those who enjoy a little heat!
  • 500 g fresh clams cleaned, look for the freshest clams for the best taste.
  • 1 cup dry white wine key for a rich and flavorful broth.
  • 1 lemon juiced and zested the brightness of lemon balances the richness of the dish.
Fresh parsley
  • chopped for garnish, adds a pop of color and freshness.
Salt and pepper

Grated Parmesan cheese

Method
 

  1. Step 1: Start by cooking the spaghetti or linguine according to the package instructions until al dente. Remember to reserve 1 cup of pasta water before draining!
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Step 3: Add the cleaned clams to the skillet and pour in the white wine. Cover the skillet and cook for about 5-7 minutes, or until the clams have opened.
  4. Step 4: Stir in the lemon juice and zest, then season with salt and pepper to taste.
  5. Step 5: Add the cooked pasta to the skillet, tossing everything to combine. If the mixture feels too dry, add reserved pasta water a little at a time until you achieve the desired consistency.
  6. Step 6: Remove from heat and garnish with freshly chopped parsley. Serve with grated Parmesan cheese on top if desired.
