Ingredients
  

For the Cranberry Brie Bites
  • 1 package puff pastry thawed
  • 1 cup cranberry sauce homemade or store-bought
  • 8 oz brie cheese wheel
  • 1 ea egg beaten, for egg wash
  • 1 ea fresh rosemary optional, for garnish

Method
 

  1. Step 1: Preheat the oven to 375°F (190°C).
  2. Step 2: Roll out the puff pastry on a lightly floured surface and cut it into squares, approximately 3x3 inches.
  3. Step 3: Place a square of puff pastry into each cup of a greased mini muffin tin.
  4. Step 4: Cut the brie cheese into small pieces and place one piece into each pastry cup.
  5. Step 5: Add a spoonful of cranberry sauce on top of the brie in each cup.
  6. Step 6: Brush the edges of the pastry with the beaten egg.
  7. Step 7: Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
  8. Step 8: Remove from the oven and let cool slightly before serving. Garnish with fresh rosemary if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at a low temperature to keep the pastry crispy.
