Method
 

  1. Step 1: In a medium saucepan, combine the milk, heavy cream, sugar, cherry blossom extract, and salt. Heat over medium heat until the mixture is warm but not boiling.
  2. Step 2: In a small bowl, mix the cornstarch with a few tablespoons of the warm milk mixture to create a slurry.
  3. Step 3: Gradually whisk the cornstarch slurry back into the saucepan with the remaining milk mixture.
  4. Step 4: Continue to cook, stirring constantly, until the pudding thickens and coats the back of a spoon, about 5-7 minutes.
  5. Step 5: Remove from heat and stir in the vanilla extract.
  6. Step 6: Pour the pudding into serving dishes and allow it to cool to room temperature.
  7. Step 7: Refrigerate for at least 2 hours until set.
