Ingredients

For the Buri Daikon
  • 2 pieces yellowtail (buri)
  • 1 medium daikon radish peeled and sliced into thick half-moon shapes
  • 4 cups dashi broth
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons sake
  • 1 tablespoon sugar to round out the flavors
  • Green onions for garnish

Equipment

  • Medium Pot

Method

  1. Step 1: Begin by peeling the daikon radish and slice it into thick half-moon shapes.
  2. Step 2: In a medium pot, combine the dashi broth, soy sauce, mirin, sake, and sugar. Bring this mixture to a boil over medium heat.
  3. Step 3: Once boiling, carefully add the daikon slices. Let them simmer for about 15 minutes, or until they are tender but not mushy.
  4. Step 4: While the daikon simmers, slice the yellowtail into thick pieces.
  5. Step 5: After the daikon has softened, add the yellowtail slices to the pot. Gently stir to ensure they are submerged in the flavorful broth.
  6. Step 6: Continue to simmer for an additional 20-25 minutes.
  7. Step 7: Once everything is cooked, remove the pot from heat and let it rest for a few minutes.
  8. Step 8: Serve hot, garnished with chopped green onions if you like a pop of color and freshness!
