Ingredients
  

For the Ice Cream Base
  • 1 cup azuki beans
  • 3 cups water
  • 1 cup granulated sugar
  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

  1. Step 1: Rinse the azuki beans under cold water and drain them well.
  2. Step 2: In a pot, combine the rinsed azuki beans and water. Bring to a boil, then reduce to low and simmer for about 1 hour until tender.
  3. Step 3: Drain the cooked beans, return to the pot, add sugar and salt, and cook over low heat until the sugar dissolves and mixture thickens slightly.
  4. Step 4: Remove from heat and let cool to room temperature.
  5. Step 5: In a separate bowl, whisk together coconut milk, heavy cream, and vanilla extract until well combined.
  6. Step 6: Once cooled, gently fold the bean mixture into the coconut milk mixture until blended.
  7. Step 7: Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions for about 20 to 25 minutes.
  8. Step 8: Transfer to a container and freeze for at least 4 hours or until firm.
  9. Step 9: Serve in bowls and enjoy!

Notes

Store in an airtight container in the freezer for up to two weeks. Let sit at room temperature for a few minutes before scooping.
