Azuki Beans
  • 1 cup azuki beans sweet and perfect for both savory and sweet dishes
  • 4 cups water to help cook the beans
  • 1 pinch salt optional, enhances flavor
Sweetener of Choice

Method
 

  1. Step 1: Rinse the azuki beans under cold running water to remove debris.
  2. Step 2: In a large pot, combine the rinsed beans and 4 cups of water, ensuring the water covers the beans completely.
  3. Step 3: Bring the water to a boil over medium-high heat.
  4. Step 4: Once boiling, reduce heat to low, cover the pot, and let it simmer for about 60 to 90 minutes, or until the beans are tender.
  5. Step 5: Add a pinch of salt during the last 15 minutes of cooking if desired.
  6. Step 6: Once cooked, drain any excess water and serve warm, or cool for later use.

Notes

Store in an airtight container in the fridge for up to 5 days or freeze in portions for up to 3 months.
